Banana Bread..Just like my Mama's!


I was craving Banana Bread. 
My mom's banana bread to be exact. 
The warm amazingness that she would bake up and sometimes still brings with her when she visits. I failed. miserably. I tried to substitute an ingredient and it was too big of an ingredient to substitute.  I couldn't even eat it. although the husband and baby had no problem. 

but before you judge me and my pickyness....picture a very nauseas very hungry 13 weeks pregnant lady...who finally thought of something to eat that wouldn't make her even more sick. my hopes and dreams were pinned on this banana bread..and it came out of the oven tasting like a lemony gooey mess. hormones are raging...tears are brewing. my husband is slightly nervous and hugging me. (haha. i laugh now thinking back of how ridiculous i must have looked.) oh i should also say that we have been stuck in the house for daysss because of a snowstorm. that had to factor into my emotional mess....but now i'm just trying to make myself feel better.

So as i called my mom that night practically on the verge of tears..totally upset that i pushed myself while feeling so sick only to end up with something that tasted NOTHING like my mom's banana bread.

so like a good mom she listened to me and sympathized with me and encouraged me through this pregnancy and the sick part. And the next day when i called her for her recipe she immediately got on her computer and e-mailed it to me! haha. she is the best. 

I made it today...slightly nervous that i would somehow mess it up again and then seriously have a snowstorm-pregnancy meltdown.. but i didn't! It tastes just like my mom's! It's a good day. You have to try this recipe if you are wanting the best Banana bread you have ever tasted.... here are her exact directions she e-mailed me that she got from a cookbook down the road..i'm not sure which one. i will try and find out! The recipe is so simple and full of basic ingredients that i'm sure you have around...i don't know about you but i somehow end up with atleast 3 brown bananas in my fridge on a regular basis. (this one takes two.)

BANANA BREAD 
½ cup butter or margarine
½ cup light brown sugar
½ cup white sugar
3 Tablespoons sour cream (2 Tbs. milk and 1 Tbs. lemon juice or orange juice)
2 eggs
1 cup mashed ripe banana
Grated rind of 1 orange (optional)
2 cups flour
1 teaspoon baking powder
½ teaspoon soda
¼ teaspoon salt
½ cup chopped walnuts or pecans (optional)

"Cream softened (but not melted) butter or margarine.  Add sugar, creaming until well blended.  Add sour cream.  Stir eggs into creamed mixture.  Add orange rind (optional).  Mix together the dry ingredients and add them to the creamed mixture alternately with the mashed bananas.  Fold in nuts. 
Pour into a well-greased loaf pan and bake in a medium oven (350 degrees) about 50 to 60 minutes (usually about 10 minutes longer), or until knife stuck in the center comes out clean.
Cool only a couple of minutes, just until you’re barely able to stand the heat, and run a knife around the edges.  Holding the pan with a hot pad, quickly pop the loaf out onto a piece of foil.  Immediately wrap up the loaf, air-tight, and let it set overnight.  If you skip this step and let it cool before you wrap it up, it will be too dry and not even seem like the usual recipe.
In the morning, slice the loaf into ½ inch slices and then cut them down the middle.  Eat a lot because it’s good for you.

My mom and mother-in-law both make really good banana bread and I haven't had any in a while. This is making me want some! Hope you have a good weekend.
