FAST Chicken Enchiladas for the Busy Mama

I made up the other night..Fast and Delicious.
I seriously came home from the grocery store
and threw this meal together in no time!
Here's a fantastic recipe for
easy and fail proof Chicken Enchiladas!
I had a coupon for a KRAFT PHILADELPHIA Cooking Creme and thought
I would try out the recipe it had on the back of the container
(I felt like I was in a commercial where the lady at the store goes mmmm..that's what's for dinner! ;)

easy and fail proof Chicken Enchiladas!
I had a coupon for a KRAFT PHILADELPHIA Cooking Creme and thought
I would try out the recipe it had on the back of the container
(I felt like I was in a commercial where the lady at the store goes mmmm..that's what's for dinner! ;)
I changed things up a bit to be similar to the FABULOUS version of The Pioneer Woman's White Chicken Enchiladas Recipe that I always use. But that recipe has a few more steps..and is a bitttttt more..unhealthy. (soooo worth the effort and calories though.)
This was one of those nights where I had to cook dinner with babies at my feet...needed something fast..and NOT a PB&J. I needed real, yummy food. I kind of made it up as I went along but tried to keep the recipe as similar as possible.
-1/2 Cup Colby Monterey Jack Cheese
-Small Tomato, chopped
-8 Flour Tortillas
-3 Cups Shredded cooked Chicken
-And the Special Super-Mama Ingredient.....
PHILADELPHIA Santa Fe Blend Cooking Creme
-Small Tomato, chopped

PHILADELPHIA Santa Fe Blend Cooking Creme
Chicken Mixture:
Heat a pan..add some olive oil..cook and stir onions on medium high heat 4-5 minutes
Add your shredded chicken.
A Handful of diced tomatoes (I used fresh but canned is fine too)
A handful of chopped onions
3/4 Cup of the KRAFT PHILADELPHIA Cooking Creme: Santa Fe Blend
A swish of Cream
Steps:
Grease Pan with cooking spray.
Preheat Oven to 350 Degrees.
Take your tortilla, fill with a spoonful of the chicken mixture and a sprinkle of cheese, roll and place seam side down in the pan.
Keep doing this till you fill up your pan.
Pour the cheese sauce over the rolled tortillas..Sprinkle with more Cheese.
If you have it..top it off with chopped cilantro. yummy!
Bake in the oven for 15-20 minutes or until toasty cheesy.

In a seperate sautee pan I dropped in a
-heavy spoonful of the PHILADELPHIA Cooking Creme: Santa Fe Blend
-2 handfuls of Colbery Monterey Jack Cheese
-and a swish of heavy cream (yes seriously...a "swish". I have no idea how much I put in. maybe 1/2 a cup?? Just enough to make it swishy!! because that makes total sense!..It all depends how much you want to put on top..)
Stir until melted and delicious.
(it's ok if the cheese doesn't melt all the way..it's going in the oven!)

to add into the mix and this one is a keeper!..
Change it up to fit what you like..
but it's a great fast meal.
