Easy Fabulous Pasta- Roasted Tomatoes and Arugula
Been a busy past few days..
Just got home from our friend's John and Kate's wedding yesterday!
Beautiful and sooo fun! We left the bambinos with friends and
enjoyed some ben and natalie time..it was so nice!

I wanted to share something today...
This recipe has been a recent..

So I thought I would share it!
Pasta with Roasted Tomatoes & Arugula
1. I had some tomatoes and arugula in my fridge left over from other recipes....
2. I wanted something plain but with flavor!..
3. I had babies at my feet and needed something fast before all craziness broke loose. :)
(the chicken shown was just seasoned with Emeril's and then frizzled up in a little olive oil.)
Cook up your pasta..Use your favorite kind.. Drain..Return to pot
I wanted something simple sauce wise..
just olive oil, a little butter, and a splash of cream. salt and pepper.
Then I tossed in some arugula and let it soften in the pasta.
DELISH!
The hubby was happy..
I was happy..
the babies ate it sliced up..
and the produce didn't spoil in the fridge..
VICTORY!

STEPS:
I put the water on to boil...
Sliced up some tomatoes..placed them on a cooking sheet..drizzled with olive oil salt and pepper and threw in the oven (450 degrees till they look...roasted. ??)I put the water on to boil...
